Apologies for the wordy title – I was just describing everything on the plate! This is such and easy and tasty dinner, it requires very little effort!

1) peel and slice 2 sweet potatoes, drizzle with olive oil and bake at 180 degrees c.

2) after 5 mins, put the fish in. I use frozen because it’s cheaper to buy and lasts a long time. To prepare, place the fish on tin foil and spread pesto on the top. Wrap up the parcel and place on a baking tray.

3) bake the fish and sweet potato for 25 mins.

4) remove the fish from the oven and open up the parcels – sprinkle breadcrumbs on the top and put back in the oven, leaving the parcel open.

5) after 5 mins take everything out. Sprinkle feta over the sweet potatoes and olives on the fish. Add some boiled brocolli to your plate for extra green.

Don’t lose the juice in the foil! You should have a light pesto drizzle for the fish.

The thing I learnt with mug cakes is that the photographs on Pinterest are all lies. Despite that, this mug cake was absolutely delicious and I can’t wait to try out a different flavour.

1) in a mug place 2 heaped dessert spoons of Nutella, 1 dessert spoon of cocoa powder and 1 small-med egg.

2) whisk til smooth.

3) place in the microwave for 70 seconds. 

Try to wait a few mins before diving in as it’s boiling! 

 
I think this is the easiest soup I’ve ever made. It also tasted pretty darned great as well. Although Heinz tomato soup can never be beaten, if you want a fresh tomato soup, this is the one.

1) pre heat the oven to 180 degrees C. 

2) chop 6 tomatoes, 1 onion, 1 red pepper and place in a roasting tin. Add 2 peeled cloves of garlic and drizzle with olive oil.

3) bake for 45 mins.

4) once roasted, let cool for 5 min and transfer to a blender. Pulse a few times and pour in 1/2 cup of veg stock. Blend for 1-2 mins. Add 1/2 cup of veg stock and blend again til you reach the desired consistency. 

5) season with black pepper, salt and some dried basil.

I pour my soup into a thermos and let it cool, then transport it to work that way. It stops any spillages!

If you have fresh basil I’m sure that would be a glorious addition. You could also add chilli to spice it up.
