I’m not one for blowing my own trumpet, but these crispy baked new potatoes are super tasty. Especially since I picked up my potatoes for 29p in the Co-op. Reduced stuff is the best. 

1) wash and chop potatoes. Pop in a pan of hot water and boil for 5 min or til soft. 

2) drain a bash a couple of times with a masher – don’t lose the shape of the potato!

3) drizzle with sunflower oil, season, shake over herbs. 

4) place in an oven proof dish and bake for 20-25 mins on 190 degrees c.

I had these with fish and peas, a nice healthier alternative to chips.
