I glimpsed someone on Twitter posting a cheat’s carbonara with an egg on top of pasta, so I decided to make a veggie version. I’m not vegetarian, I just didn’t have any bacon!

1) boil your pasta in a pan on the hob – I used a mixture of wholewheat and normal.

2) in a pan fry 3 large mushrooms til browned then add 3 handfuls of spinach leaves til they wilt. Take off the heat, add a knob of butter, grate over Parmesan and leave to one side.

3) crack an egg into a rammekin and leave to one side.

4) bring a pan of water to the boil and shake in some vinegar. Once bubbling, stir the water with a spoon to create a vortex. Pour the egg in and stop stirring so it has a chance to swirl round.

5) remove egg scum from the pan with a slotted spoon. After 3/4 mins, remove the poached egg.

Plate up by placing spaghetti in a dish, add the spinach and mushrooms, then put the egg on top. All food is better with an egg on top. Finish with a grate of Parmesan.
