A busy week at work meant food prep for afternoon munchies was required. Can’t beat a roasted chicken leg – super cheap, super easy and super filling.

1) create marinade for the chicken by mixing together: Chinese 5 spice, 1 tsp minced ginger, 1 garlic clove, 2 dessert spoons of soy sauce, 1 dessert spoon of honey, black pepper.

2) drizzle over chicken and leave for as long as you can (I cooked mine straight away cause I didn’t have time to wait). Oven roast on 180 degrees C for 25 mins.

3) once cooled, pop in the fridge and pop in tuppaware to take to work.

My top tip is to get minced ginger in the world food section – I got a massive jar for £1! Bargain.

Also ensure you’ve got a tissue on hand to wipe your sticky fingers.
