I’m trying to make healthy snacks at the mo and thought I’d try muffins without the sugar. These were surprisingly good and I didn’t miss the sugar – the blueberries made them sweet enough.

1) mix dry ingredients: 1/2 cup plain flour, 1/2 cup oats, 1/2 tsp baking powder, heaped tsp cinnamon.

2) in a separate bowl mix wet ingredients: 1/2 cup milk, 1 beaten egg, 1 heaped dessert spoon of runny honey and 1/4 cup of melted butter.

3) mix altogether and stir in a punnet of blueberries.

4) place mixture in cake cases (this made 7 muffins), and bake for 25 mins at 180 degrees C.

Perfect for my lunch box.
