These cookies are what you might call ‘rustic’… Despite their wonky appearance (which I think makes the more homely anyway) tasted lovely. 

1) in a bowl mix: 1 cup of oats, 3/4 cup of plain flour, 1 tsp of baking powder, 1 egg, 1/3 cup of melted butter and 1 tablespoon of melted honey.

2) fold in a handful of peanuts and raisings and a shake of cinnamon.

3) place cookie batter onto tray lined with baking parchment. Pat flat with the back of a spoon.

4) bake on 160 degrees c for 15 mins.

I tried to make these as healthy as possible with no added sugar. They came out crunchy and scrummy.
