Ran 10k this morning, now enjoying a chilled afternoon. Planning to save some pennies this month, so made myself some yummy granola bars. Followed this recipe, but added yoghurt cuz I’m addicted to those Eat Natural yoghurt bars.

1) Put a pack of medjool (sp?!) in the food processor. (Kenwood, naturally. Also it sounds like someone is drilling outside when whizzing up dates. Oh and make sure they don’t have stones in!).

2) Put 1 cup of oats, 1 cup of mixed dried fruit and nuts in a bowl together with date mixture.

3) Melt two dessert spoons of peanut butter (I only had crunchy cuz it’s the only PB which should be allowed) and 2 tablespoons of honey.

4) Pour melted PB and honey over the oat/nut/date mixture and mush it all together.

5) Line a baking tray (I used a lasagne dish) with baking parchment and pour the mixture in.

6) Pat it down flat with the back of your hand (the mixture kept sticking when I used a spoon).

7) Slop on some low fat greek yog and chuck in the freezer for half an hour.

Chop and pop in a tuppaware. And maybe eat one. Or two. Woops.
