Running a 10k tomorrow, as you do, so fancied a healthy din dins.

1) peel and cube a sweet potato, drizzle with olive oil, add a grind of black pepper, shake of paprika and dried chilli flakes. Put into oven on a baking tray at 180 degrees c. Cook for 35/40 min overall.

2) chop a shallot and add to a pan of oil, cook til softened. Add a tin of tomatoes and stir, add a sploodge of tomato purée, a shake of basil and a grind of black pepper.

3) simmer tomato pan for 20 min. 

4) after pots have been in 20 mins, put frozen cod in a tinfoil ‘bag’, place on baking sheet with sweet potato. Oven for 25 mins.

5) take cod out and place in pan with tomatoes for 3-5 mins to finish off.

6) boil some broccoli.
