Last 2 weeks have been bonkers at work and I’ve finally got a day off today. Ergo I tried my hand at blueberry pancakes based on this Lakeland recipe.

1) mix wet ingredients: 1 egg, 1 cup milk, 2 big dollops of natural yog, 1 tbsp of melted butter.

2) separate bowl, mix dry ingredients: 1 cup wholemeal flour, 2 tbsp sugar (I missed out salt cuz I didn’t have any, can you believe that?! Shop later…)

3) combine wet and dry, whisk. I folded in frozen blueberries but I reckon they’d work better with fresh and just adding them once you’ve cooked the pancakes.

4) pop on a plate once done and guzzle like you’re in ‘murica!

Yes, I did nosh the entire plateful in the pic. It’s been a long week…
