Had the WORST journey home from Liverpool yesterday, so decided to bake. I’ve only ever made cakes once and they came out tasting like scrambled egg. These, luckily, did not!

Preheat oven to 180 degrees C.

1) mix together dry ingredients: 1 cup rolled oats, 2 cups plain flour, 1/3 cup caster sugar, 1 tsp baking powder, 1 tsp bicarbonate of soda.

2) separate bowl, mix up wet ingredients: 1 1/2 cups of low fat natural yogurt, 2 beaten eggs, 4 dessert spoons of melted slightly salted butter (I used lurpak).

3) add wet ingredients to dry and mix in well, the batter is quite thick but stick with it.

4) fold in a cup of frozen blueberries.

5) spoon mixture into muffin cases and pop in the oven for 20-25 mins. Take out to cool.

I’ve already scoffed two. Next time I might use a flavoured yoghurt just to mix it up a bit. Maybs coconut. Mmm.

Not bad for a first attempt at baking. I loosely followed this recipe and just substituted ingredients for what I had in the cupboard.
