Had a spare hour before work this morning so decided to have a proper breakfast. Followed this recipe and since I’m super impatient I didn’t think it was going to work. Have faith in your grill. It will work!

1) Peel and thinly slice a potato, whilst cooking 2 sausages.

2) Chop the sausages small and place with potato in a frying pan. Fry for a minute or two. Add spinach.

3) Beat 4 eggs and add a small tin of baked beans (yeah I thought that was weird too, but it actually works).

4) Pour eggy beany mixture over the sausages, potato and spinach and cook on the hob for 5 mins.

5) Put pan under the grill. And wait.

6) Keep waiting and keep an eye on the frittata.

It comes out looking like this:

Have a slice and ‘save the rest for breakfast tomorrow’. I can guarantee it won’t last the day.
