So I wanted to do this recipe but veggie and it still tasted divine despite looking nothing like the original!

1) chop up cauliflower, 1/2 an onion, 1 potato and green beans.

1.5) par boil the potato.

2) make a paste of minced ginger, minced garlic, chilli powder, chilli flakes and curry powder. Add to pan with a glug of vegetable oil and start cooking the onions.

3) after 5 mins and the onions are soft, add a tin of coconut milk.

4) put the cauliflower, drained potato and green beans in the pan and cover. Simmer for 20 mins.

5) put brown rice on (1/2 cup rice, 1 cup water, bring to boil and summer for 20 mins). Do this whilst the curry is cooking.

6) add spinach to the curry after it’s been cooking for 25 mins. Serve up after 35.

7) add a sprinkle of coriander to serve.

Enjoy the smell of it on your fingers, fill up a bowl with the curry and rice, munch away 🙂

This was like a thai flavoured curry, I’m not sure that was how it was meant to turn out. Anyway experiments are experiments! My tummy is happy.
