So I went to Sainsburys and the cost of a carrot was as much as a huge bag of reduced carrots so obvs I bought the huge bag. What else to make with a glut of carrots than soup?

1) chop an onion, potato and the carrots.

2) melt a blob of butter in a pan and brown the onions, then add the potato and carrots and sweat on a low heat for 10 mins.

3) add a pint of veg stock and simmer with the lid on for 20 mins.

4) wait for it to cool for a min, then chuck in a blender (my beautiful new Kenwood blender, which I have a bit of a weird obsession with)

5) return to a pan, season and stir in fresh coriander.

6) try not to eat it all whilst “testing” the flavour.
