When I make chilli, I make a vat of it and it lasts me all week.

1) Brown mince in a pan, crumble over beef oxo cube.

2) Add chopped onions and fry 5 mins or so.

3) Add veg (red peppers, courgette, mushrooms, peas, whatever you fancy).

4) Add tinned tomatoes plus a big shake of: chilli powder, chilli flakes, smoked or regular paprika, cayenne pepper and black pepper. Cook for a few mins whilst stirring.

5) Drain kidney beans and add to the pan. Cover and simmer for 20 mins.

6) Serve with rice/wraps/salad/nachos/dollop of sour cream/ guacamole.

7) Leave leftovers to cool and have for lunch tomorrow!
