OMG tart. This was a Friday night bomb of a dinner. Sod takeaway.

1) Peel and chop red onions. Melt knob of butter in pan. Cook onions on mid heat for 5 min to soften. Add a dash of balsamic vinegar. Turn heat down and sweat with a lid on for 5 more mins.

2) Open Jusrol puff pastry sheet (yes I cheated but I’m working on pastry. That actually involves measuring stuff out).

3) Egg-wash 2cm around the edges.

4) Put onions on puff pastry, then spinach (raw), finish with feta.

5) Bake at 180-200 degrees C for 15-20 mins or until golden brown round the edges.

Sweet potato fries

1) Peel and chop sweet potato.

2) Add to large bowl, roll in olive oil, ground pepper and salt.

3) Bake for 40 mins at 180-200 degress.

Green beans – steam for 5 min

Brocolli – boil for 5 min

Man sweet potato fries are the best ever ever.
